Maple Sugar TimeFor Ferme St-Ours, the end of winter is marked by the maple grove’s exploitation, which provides, at the same time, a good excuse for celebrating with family.
Starting in the middle of March and ending at the end of April, this period involves tapping trees, installing the tube system, producing maple syrup, as well as bottling and processing several derivative products. A good sap flow is ensured by regular variations of trees’ frost at night and their thawing at day. Whether we call it sugaring time, sugaring season or simply sugaring, this short period of the year combines winter and spring and ends with the last frost and the arrival of buds in the trees, and the seasonal birds and butterflies.
